Golden, ultra-thin crackling with juicy pork beneath — this Sio Bak is prepared using a careful, multi-step roasting process to achieve its signature crisp skin.

Before roasting, the skin is salted to draw out excess moisture, then air-dried overnight. The pork belly is first cooked gently to render the fat and keep the meat tender, before being finished at high heat to achieve that light, brittle crackle without heaviness. The result is skin that’s thin, crisp, and clean-tasting, paired with well-balanced layers of meat and fat.

Cut into bite-sized cubes, each portion contains around 12–15 pieces, making it easy to share or enjoy as part of a complete meal.

Cooking instructions:

  • Airfryer: Ready within 15 mins! Preheat airfryer at 220C. Wrap Sio Bak with aluminium foil (leaving skinside up and exposed). Airfry for 15-20 mins, depending on crispiness desired.
  • Oven/Toaster: Ready within 20 minutes! Preheat appliance at 220C. Wrap Sio Bak w aluminium foil (leaving skinside up and exposed). Let Sio Bak cool for 5-10 mins before serving. 

Pro tip! Cut the Sio Bak with skin side down using a sharp knife to achieve chunks of crispy pork belly, just like your roasted meat stalls
