Step 1: Make the Honey Soy Glaze

Create a simple mixture of honey (4 tablespoons) and soy sauce (2 tablespoons). Once it’s well mixed, pour it all over your pork loin and set it aside.

Step 2: Prepare vegetables to roast

The first rule of preparing your vegetables is to wash them all first. Make sure there is no dirt and that the vegetables are free from any bruises or signs of rot.

  • Asparagus: Trim off the tough and woody ends of the asparagus.
  • Carrots: Cut off both ends of the carrot, especially the top green stem. Then, peel the outer layer of the carrot skin with a vegetable peeler or knife. Finally, slice the carrot into semi-thin round pieces.
  • Tomatoes: Slice the tomato in half lengthwise and then slice each half into wedges.
  • Cherry Tomatoes: You can keep the stems of the cherry tomatoes intact. However, if you prefer to remove the stems for aesthetic or practical reasons, it is fine to do so. Ultimately, it is a matter of personal preference.
  • Potatoes: Cut the potatoes into evenly sized pieces, depending on your preference. You can peel the potatoes using a vegetable peeler or leave the skin on for added texture and nutrition.

Step 3: Cook using air fryer

Lay the aluminium foil and place the glazed pork loin and all the vegetables in your air fryer. Once placed, pour the remaining Honey Soy Glaze over the pork and vegetables. For finishing seasoning, add olive oil and salt to taste. Finally, cook everything at 200°C for 12-15 minutes. Remember to flip the pork loin over at the halfway mark!

Give this recipe a try! Whether you're short on time or just looking for a quick and easy meal, this Honey & Soy Glazed Pork Loin with Roasted Vegetables is sure to satisfy and fill up your stomach at the end of a long day.
